Easy Crockpot Chicken Stroganoff

Take four boneless, skinless, chicken breasts and place in crockpot, pouring one can of cream of mushroom soup over them. Sprinkle one package of dry onion soup mix over that. Place on low and cook all day (about 6-8 hours - until the chicken is tender and can be easily broken apart using a fork.) One hour before serving stir in one large container of sour cream (use fat free if you are watching your fat grams). Serve over rice or flat egg noodles. You can also add some mushrooms during the last hour of cooking, if you like. This is terrific and a great way to stretch chicken. Makes about 6 generous servings.

Elizabeth's Quiche

Two regular frozen pie crusts

4 eggs

6 ounces of shredded Swiss cheese

12-14 strips of crisp bacon, drained and crumbled

2 cups of heavy cream

¾ tsp. of salt

Preheat oven to 425 degrees. Place shredded cheese in the bottom of the pie shells and top with crumbled bacon (if you're not eating Atkins, you can do it the opposite way and put the bacon down first), dividing it equally between the two. In a small mixing bowl whisk together the eggs and cream. Add salt, mix and pour over the cheese-bacon mixture in the two shells.

Bake at 425 degrees for 10 minutes, then turn the oven down and bake at 325 for 15 to 20 minutes, or until the top is nicely brown. Remove and cool until the quiche is slightly warm.

Serve slightly warm (not hot or cold), reheating leftovers for a few seconds in the microwave. Tons of fat grams, very few carbs and you don't even want to think about the calories, but – what a way to go!

 

Taco Salad (Atkins Diet version)

Now, here's a dish for those on the Atkins' diet. It's an eating plan  that really works, although it's pretty dull and definitely not for vegetarians. But both versions of this dish are yummy. Enjoy!

Layer, in order:

Shredded lettuce

Chopped tomato

Hamburger, browned and cooked with taco seasoning (check the carb count on the seasoning) still hot

Shredded cheddar cheese

Add generous dollop of sour cream (regular, not non-fat)

Optional: Can top with a sprinkle of sliced black olives, if desired

(For non Atkins dieters, to cut the fat, use extra-lean ground beef, nonfat cheese and fat-free sour cream. You can also add tortilla chips (baked, not fried) and some low-fat Catalina dressing.)

 

Fast Barbecued Beef

For those who like their meals fast and easy, here's something that takes practically no time at all. Take some round steak and cut it into medium-sized pieces. Place in the crock pot and cover with your favorite barbecue sauce (remember less is more). Cook all day on low and when you get home, stir it really good before putting it on buns, so that it shreds. Enjoy on those fast-paced fall days.

Crockpot Pot Roast

Take a nice, boneless chuck roast and wash it, then pat it dry. Place in crock pot and season with pepper and garlic. Add small, unpeeled new potatoes, peeled baby carrots, a large onion that's been cut into pieces and cook on high until fork tender. You can add some fresh mushrooms the last hour. This works well with any tough cut of beef. If the roast appears to be cooking too fast, cook on low for the last hour or two.
