Mushroom-Barley Pilaf
˝ lb. Fresh mushrooms, rinsed and sliced
1 large Onion, chopped
2 cups Chicken or beef broth
4-5 Tbsp. Butter
1 cup Barley
Sauté mushrooms and onions in the butter until soft. Add barley to butter mixture and brown lightly. Salt and pepper to taste. Put mixture in large casserole dish and pour broth over contents. Bake covered at 350 degrees for 30 minutes, then uncover, stir and bake another about 20 minutes, until liquid is absorbed. |
